Tiffin today: Tomato and garbanzo salad

I like seeing the different combinations that can come from the same basic ingredients.


I mixed the tomato salad left from my meal prep day with garbanzo beans for the first bowl.  Yesterday I enjoyed the pineapple and pomegranate combination so much that I went for it again.  Steamed sweet potato on the side along with walnuts.

Not quite the rainbow, but close!  Otherwise well balanced with sweet potato, a good starch, legumes for protein, and walnuts for healthy, plant-based, whole food fats.  A variety of fruits and vegetable for micronutrients.  Feeling good about it!
