Tiffin delight:  aubergine and quinoa

The niftiness of this tiffin has not worn off yet. I am compelled to share packed lunch when it looks this cute and organized!

​This is when weekend meal prepping really starts paying off.  Everything was ready. I just had to make a quick batch of red quinoa.  Decided to mix in some garbanzos for a little extra texture pizzaz. The aubergine was ready. All I had to do was put some into the second bowl and sprinkle on toasted sesame seeds. The carrot sticks and nuts are for tea.
