I’ve been chowing on this since I dreamed it up! Steamed beets, a lot of fresh chopped mint, steamed flat beans, tofu, and toasted almonds tossed in fresh lime juice.
Things spoil fast here so I usually freeze my tofu. Freezing does change the texture a bit, making it more chewy. Fine with me. I like tofu either way, though I don’t eat it very often. Steps for this tofu: 1) defrost, 2) slice it, 3) sprinkle pan and tofu with cayenne, 4) dry fry, flipping often enough to let it brown but not stick to the pan. Easy!
